An Easy Yet Elegant Italian Dinner For Friends

We have been having a heat wave here in San Francisco. I mean it got up to 85F this past weekend! Now, I know all you east bay area folks are rolling your eyes and secretly wishing the 100 plus degree weather you were experiencing was only 85F but let me tell you, us San Franciscan’s are not used to 85F weather. So to take advantage of our unusually nice weather, I have been spending most of my time laying out by the pool. And let me tell you, I am sporting a killer tan right now! Needless to say, all this tanning has left me with little time to cook or blog. I don’t know about you but when it is hot outside, the last thing I want to do is stand in a kitchen with the oven and burners emanating massive clouds of heat at me. I know I should probably be posting something very fourth of July-ey like grilled burgers, or red, white, and blue cupcakes but again, have not been cooking so have none of that to show. Maybe next year it will be the usual 60F around her for fourth of July! Instead I am posting about a dinner I was supposed to post about early last week. I have not had time to edit all the pictures and write out the recipes so this is just a teaser of a dinner I threw together for friends. Recipes will follow later.

We had some friends over the other night for dinner. Since it was a weeknight I decided to keep it simple with the easy yet very elegant Italian-style dinner. We started with grilled olive oil bread and roasted garlic spread for an appetizer.

The main entree was a Caprese stuffed chicken breast wrapped in prosciutto. It was really tasty, but then again, what isn’t tasty when stuffed with fresh mozzarella and wrapped in prosciutto?

This was served with spaghetti tossed in a very simple triple tomato sauce. This dinner was simple enough to make during the weeknight, yet elegant enough to serve for company.
